Creativity in Cooking or WTF do I make the day before payday?

I had my weekly weight-loss support group meeting this morning. Up a bit from last week. So not concerned because last week was the 1st week of regular Crossfit classes. I am going out of town next week, so this week I’m going to pay extra attention to not letting myself get sloppy w/ Paleo.

In the spirit of that, I had scrambled eggs after I got home from TOPS, and did some cardio. I had one square of dark chocolate after that to replenish. Also did heavy lifting – i.e. laundry.

What’s for dinner, you ask. Well, I have no freaking idea. The last few days before payday can be tough. We’ve gone through all the readily-recognizable-as-yummy stuff, and have to get creative with what’s left. So, when I get done with this blog post, I’m going to go stick my head in the oven deep freezer & try to find an appealing chunk of meat that I can envision making magic with in the kitchen. Just one more meal, really, cuz payday is tomorrow. I can do this!

EDITED TO ADD: So, what did I end up making? Burgers. Pulled out two pounds of grass-fed ground beef. Thawed. Added sea salt, garlic powder, dried onion flakes, parsley. Formed & fried in Kerrygold butter. Ate with paleo mayo, yellow mustard, sugar-free ketchup, and kosher dills. Simple, easy. Delicious!!

  1. Some of my best meals have come from forgotten ingredients found deep in the fridge/freezer/pantry! Congrats (? is that the word to use?) on starting crossfit!!! It’s pretty amazing! I really need to get back into it.
