Bacon, Chicken, Broccoli Bake #21DSD
Today is Day 1 of the 21-Day Sugar Detox. I decided to get creative with some ingredients I used for the family (Level 1) to make it Level 3 compliant.

Ingredients (feeds 2):
2+ strips bacon (I used Trader Joe’s Ends & Pieces)
1/2 lb pastured chicken pieces (I used two breasts, but thighs would be even better)
Finely diced onion and fresh, crushed garlic – add to taste
1/2+ tsp sea salt, to taste
1 can (~2 cups) organic coconut milk
1+ pound lightly steamed broccoli
2 cups frozen chopped spinach
Method:
Saute bacon in cast iron until rendered and crispy. Add diced chicken, until almost cooked through. Add onion and garlic. Add coconut milk. Add salt & adjust to taste. Cook down 5-10 minutes to thicken the sauce. Place broccoli and spinach in oven-safe baking dish. Pour over coconut milk sauce, and evenly distribute bacon & chicken. Bake at 350 until the top starts to brown, 15-20 minutes.
